Healthy Bite-sized Caprese

It’s the first Monday of 2014. I bet that most people’s agenda (including mine) is to diet and eat healthy. The holiday indulgence is officially over. Tapos na ang masasarap na araw, haha!

Here’s an easy and super yummy recipe that will make eating healthy enjoyable and stress-free:

Bite-sized Caprese

Insalata Caprese (salad in the style of Capri) is a simple salad, made of sliced fresh mozzarella, tomatoes and basil, seasoned with salt, and olive oil. In Italy, unlike most salads, it is usually served as an antipasto (starter).

Ingredients:

Fresh mini mozarella balls or regular fresh mozarella, cut into smaller pieces
Grape tomatoes or cherry tomatoes or native tomatoes, cut into smaller pieces
Fresh basil leaves
Extra virgin olive oil
Balsamic vinegar
Coarse sea salt
Ground pepper
Toothpicks

The key to this recipe is to choose the freshest tomatoes. I personally like using grape tomatoes; when fresh they are plum and explodes in your mouth. Mmm…

Balsamic vinegar and olive oil are healthy salad dressing options. Balsamic vinegar is flavorful and olive oil has tremendous health benefits when used in moderation. Olive oil can lower your LDL (bad cholesterol), which will make your heart healthier. Use two tablespoons of olive oil on your salad. Use as much vinegar as you like.

Easy peasy:

Step 1: Assemble the skewers by first spearing the basil leaf, then the mini mozzarella (cut length-wise for less calories) and topped off with a grape tomato.

Step 2: To make the dressing, combine 2 tbsp. of extra virgin olive oil and 2-3 tbsp. of balsamic vinegar, salt, pepper and mix well until emulsified.

Step 3: Drizzle the balsamic dressing

My whole family loves these healthy bite-sized goodies!

You can pack it for school or work, just make sure to put it in a cool compartment or use a reusable ice/gel pack in the lunch box.
