This is the best way to cheat kids (and adults!) to eating their vegetables. Easy as eating pie (hm, vegetable pie)! The healthiest food can ever be… roasted vegetables.

If you haven’t tried roasted vegetables, you’re missing out on some good flavors. I never used to eat broccoli until my husband cooked roasted broccoli with olive oil, pepper and dried rosemary. It’s now my favorite veggie!

I’m sharing with you some of my favorite roasted vegetables recipes. They are easy to cook and yummy! You and your family can snack on them anytime of the day.

Roasted Broccoli

Easy peasy:

Step 1. Combine 1 tbsp. of olive oil, 1 tbsp. of finely grated parmesan cheese, 1/2 tsp. of dried rosemary and a pinch of cayenne pepper.

Step 2. I used the air fryer to cook this dish. Set the temperature to 200 °C and cook it for 11-14 minutes, same cooking time and temperature for oven toasters. When using an oven, pre-heat the oven at 300 °C and cook for 20-25 minutes.

No oven? No problem! Use an oven toaster, an air fryer or even a Teflon-coated pan. The technique is dry air and heat. Roasting is a cooking method that brings out the best flavors and aromas out of vegetables. The browning causes the sweetness to come out, thus the term caramelize. Most vegetables like sweet potato, potato, carrot, beans only need moderate or medium heat.

Sweet Potato Fries

Step 1. Cut sweet potatoes to desired thickness. No seasoning required or you can add a pinch of salt once the fries are cooked.

Step 2. Using the air fryer, set the temperature to 200 °C and cook it for 20-25 minutes, same cooking time and temperature for oven toasters. When using an oven, pre-heat the oven at 300 °C and cook for 25-35 minutes.

Tip: Thinly sliced sweet potatoes cook faster than thick hand-cut ones

Parmesan String Beans Fries

This dish is a favorite in our household. My 3-year old son Dylan snacks on it regularly.

Easy peasy:

Step 1. Combine 1 tbsp. of olive oil, 1 tbsp. of finely grated parmesan cheese and a pinch of white pepper. Coat the string beans.

Step 2. I use the air fryer to cook this dish. Set the temperature to 200 °C and cook it for 11-14 minutes, same cooking time and temperature for oven toasters. When using an oven, pre-heat the oven at 300 °C and cook for 15-20 minutes.

I can’t cook enough of these roasted vegetables at home. My family and I devour them! Try them!

Tips:

• Add a spray or a drizzle of olive oil to give veggies a glow before roasting.
• Season with salt and pepper to taste after roasting to avoid over seasoning.
• Prepare and cut vegetables lengthwise for a good caramelized coverage.
• Don’t forget to turn the vegetables over to cook the other side.
• Mix and match vegetable colors to give a dish that playful look.
• Some dense vegetables need more cooking time. Check and taste as you go!
