The Diet Dessert You’ll Love

It’s challenging to go back to a healthy and low-calorie diet after the holidays. Haaaay! I feel ya!

I’ve learned over the years that food preparation is one of the keys to weight-loss. I’m sharing with you one of my favorite diet meals that is yummy, healthy and it’s ready to eat in 10 minutes.

Chia seeds are a nutritional powerhouse. They’re packed with omega-3 fatty acids, antioxidants, calcium, fiber and protein. Plus, these minuscule ingredients are simple to make into a pudding because they absorb up to 10 times their weight in water! They plump up into little gelatinous balls when they rest in liquid. Not only does this make chia seeds a great starting point for breakfast, a healthy snack or textured dessert, but it also means that they will help you stay hydrated.

Coconut Almond Chia Seed Pudding Recipe

Ingredients:

2 cups vanilla almond milk
1/2 cup chia seeds
1/4 cup boxed coconut milk (not coconut cream). I prefer the taste of the boxed coconut milk than fresh coconut milk but, obviously, the latter is healthier. Coconut milk has a lot of calories and fat so I only use very little, just for flavor.

Makes 3 servings (using small containers)

Easy peasy:

In a medium bowl (I use a big measuring cup as it’s easier to pour the mixture in the containers), stir together almond milk, coconut milk and chia seeds. Stir well until combined. Refrigerate for 10 minutes to 2 hours. Before serving, stir pudding again. Divide between small glass jars.

Make this and you don’t have to worry about your breakfast of dessert for days. Great for a late-night treat too.

Tip: Use small containers for fewer calories.

This vegan, dairy free pudding is creamy and sweet. You can make it ahead and keep it in the fridge for a few days.
