Argentina Corned Beef Chili Dog

A chili dog is an American Classic. It’s a hot dog on a bun that is topped with chili con carne (chili with meat).

My husband Tom makes a mean chili con carne. He cooks it at least once a month and it’s one of our signature dishes at home. It’s so good that I included his Chili recipe in my book Fashion + Food: Entertaining at Home in Style.

I made my own version of chili con carne using my favorite Argentina Corned Beef. This chili dog recipe is a combination of chili con carne and a Sloppy Joe.

Who needs a hotdog when you’ve got this tasty brew:

Argentina Corned Beef Chili Dog

Chili dog sans the hot dog!

Ingredients:

EVOO (extra virgin olive oil)
cheddar cheese, grated
sugar
salt
pepper

4 cans of Argentina Corned Beef

Clockwise: 1 can red kidney beans, washed and drained; 1 can of crushed tomatoes; 2 onions, 1 diced, 1 cut into rings; 1/2 bottle of dark beer; 2 garlic, finely chopped; green peppers, julienne

Spices: 2 bay leaves; 1/2 tsp cayenne pepper; 2-3 tbsp chili powder; 1 tbsp dried oregano; 2 tsp cumin; 1 tsp cinnamon

Easy peasy:

Step 1: Sauté the garlic and onion

Step 2: Add 4 cans of Argentina Corned Beef

Step 3: Add all the spices. Season with salt, pepper and add 1-2 tsp of sugar. Stir until all the ingredients are incorporated.

Step 4: Add half a bottle of dark beer and the other half is for drinking while cooking. LOL

Let it simmer in low heat for 8-10 minutes.

Step 4: Drain and rinse the beans gently in water.

Step 5: Once the beef and beer have simmered, add 1 can of crushed tomatoes and 1 can of beans to the mixture.

Simmer again for 8-10 minutes, uncovered.

Step 6: While the chili is simmering, in a separate pan, cook the onion rings in EVOO (extra virgin olive oil) until it has caramelized. Cook on low heat, it usually takes 10-12 minutes to caramelize the onions.

Step 7: Cook the green peppers in EVOO. Add salt and pepper to taste.

Tip: Don’t over cook the veggies. It will give your chili dog that nice extra crunch.

Step 8: Grill the hotdog buns. If you don’t have a griller, you can use a toaster or just a regular pan. You want the buns to be lightly toasted on both sides.

Step 9: Once everything is cooked, smother the bun with the Argentina Corned Beef chili con carne. Top it with green peppers, onions and grated cheddar cheese.

Serve two Argentina Corned Beef Chili Dogs at a time because just one is bitin! I promise you, it’s that good! Even my discerning husband gives this dish two legs up! Haha!

No utensils needed when serving this dish. Feel free to use both hands and take big bites!

Argentina Corned Beef Curry

It must be the cool weather and the horrible traffic in the metro that every time I get home from work, I’m craving comfort food.

Do you feel the same?

One of my favorite comfort meals to cook at home is my Argentina Corned Beef Curry. It’s creamy, hearty, yummy and super easy to make. It’s the perfect meal to relieve stress! Haha!

Everyone who’s tried my recipe gets hooked on this dish. Don’t believe me? Try it yourself!

Argentina Corned Beef Curry

Ingredients:

4 cans of Argentina Corned Beef

1 pack of curry paste (If you store curry paste is not available to you, here’s an easy recipe on how to make your own curry sauce, click here.)

400-440 ml of coconut milk (you can also use the powdered ones that you mix with water)

I use the Singaporean Nonya Curry when cooking this dish. It's not spicy and it's good for kids' palette too! You can choose your own curry paste depending on your taste. Tom likes his curry spicy so I sometimes use a red curry paste.

1 carrots, diced

2 potatoes, diced

10 pcs. of fresh basil leaves

Easy peasy:

Step 1: Cook the Argentina Corned Beef

Step 2: Add the diced carrots and potatoes

Step 3: Add the curry paste. Follow the cooking directions of the curry paste packet.

Step 4: Mix the curry paste into the veggies and Argentina Corned Beef

Step 5: Add 400-440 ml coconut milk

Step 6: Mix well and cover. Simmer for 10-15 minutes (don’t overcook the veggies). Cook in low to medium heat, stirring occasionally.

Step 7: Once it’s cooked, add fresh basil leaves.

Plating:

I serve the Argentina Corned Beef Curry in a bowl with rice… white rice. Sorry, but it’s really the best combo!

I usually take the bowl of Argentina Corned Beef Curry into our living room, curl up on the sofa and dig into it! Saraaaaaap!

I promise you, this is one of those “Oh my Gaaad” dishes!

Argentina Corned Beef Sweet Spaghetti

Sweet or Filipino-style spaghetti is my all-time favorite comfort food. I remember eating it three times a day for a whole month during one summer in high school! I would have continued eating it but my nanny was concerned that I might not get enough nutrients in my diet. Quick solution: Add veggies to the sauce!

I have been cooking this recipe since high school and my daughter Aryanna loves it too! In a recent conversation…

Me: “I think I’ll share my sweet-style spaghetti recipe on my blog as a ‘Meal Makeover’.”
Aryanna: “How are you going to makeover sweet spaghetti?”
Mom: “Well, you know how I add carrots to the sauce, right?”
Aryanna: “Yeah…”
Me: “You know that the typical sweet style spaghetti sauce doesn’t have carrots in it, right?”
Aryanna: *shocked* “It doesn’t?!!!”

I don’t know how many times my daughter’s friends have complemented me on how good our sauce is and I never tell them that there are carrots, fresh tomatoes, and bell peppers in the sauce. I finely chop the veggies and they almost look like ground beef. They can hardly tell especially when they’re hungry. So moms, don’t tell!

This time around, instead of ground lean beef, I’m using Argentina Corned Beef and Argentina Vienna Sausage. They are alternatives if you don’t have ground meat at home.

Argentina Corned Beef Sweet Spaghetti

Ingredients:

3-4 cans of Argentina Corned Beef
1-2 cans of Argentina Vienna Sausage

1 500g pack of wholemeal spaghetti

1 pack of Sweet Style spaghetti sauce

1 carrot, finely chopped
1 red bell pepper, finely chopped

1/4 cup water

2tbsp olive oil

Easy peasy:

Step 1: Fry the Argentina Corned Beef and Vienna Sausage with a bit of olive oil

Step 2: Once the meats are cooked, add the chopped veggies

Step 3: Pour in the spaghetti sauce and 1/4 cup of water (to thin out the thick spaghetti sauce)

Step 4: Mix the ingredients and simmer for 15-20 minutes, stirring occasionally

Plating:

Here’s a fun way to serve spaghetti: using a fork, twril the noodles and lower it on the serving plate. Make several portions of twirled pasta for easy serving.

Top each portion of twirled noodles with the spaghetti sauce

Pour the rest of the sauce on the side of the serving dish.

Et viola!

I can eat this everyday!

Dig in! This is sooooooooo goooooooood!

Argentina Corned Beef Mash, 2 Ways

Blame the bloated battery and busted trackpad on my computer for the lack of blog updates.

Anyway, my laptop and I have been reunited so expect some heavy blogging.

To make up for lost time (CHOZ), I’m posting two Argentina Corned Beef recipes or should I say, one recipe, two ways. These are some of my favorite hangover meals!*hik*

Argentina Corned Beef Mash Mix, 2 Ways

First up, say hello to Argentina Corned Beef Mash Patty!
I know, I know, she’s a vision.

Ingredients:

3 cans of Argentina Corned Beef
6-7 medium sized potatoes
Olive oil
1/4 cup skim milk
1 tbsp butter
salt
pepper
1 tomato, diced
fresh parsley for garnish

Easy peasy:

Step 1: Multitask—cook the Argentina Corned Beef…

… While boiling the potatoes.
Obviously, cook both in separate pans.
Do. Not. Panic.

Step 2: When the potatoes are soft (approximately 20 min. cooking time), drain them.

Step 3: Using a large mixing bowl, mix the cooked potatoes, butter, milk, salt, and pepper

Step 4: Start mashing the boiled potatoes using a potato masher or fork.
Step 5: Once the potatoes are mashed, add the cooked Argentina Corned Beef.

Step 6: Form the mix into patties and fry them till golden and crispy.

Step 7: Because of guilt, I drain my patty on paper towels.

Step 8: Serve the Argentina Corned Beef Mash Patty with fresh tomatoes and parsley

The perfect bite.

The perfect texture—crispy on the outside, gooey soft on the inside plus, the fresh tomatoes cuts through the "fried" flavor.

Next dish, using the same mix is Argentina Corned Beef Mash Meatballs!

I loooove making these as appetizers for brunch! These babies will set everyone’s palatte while you make Mimosas. Uh, excuse me, alcoholic?

Form the mix into balls and fry them till golden brown.
I went a bit overboard on the cooking oil. I think it was the Mimosa.
Use less oil to fry the meatballs… Ask someone sober to do it for you… Put. The cocktail. Down.

The secret: Ah, this is the pasabowg! I put a dollop of sweet chili sauce (I just used the bottle sweet chili sauce) in my deviled egg serving tray and add the corned beef ball on top. By doing this, it adds another layer of flavor to the mix and will sober up your guests pronto! Haha!

I know what you’re going to ask, where can you buy this deviled egg tray? I got mine at Gourdo’s, GB5. Run, don’t walk!

Argentina Corned Beef Pepper Rice

I would also like to welcome you to “Sarap ng Lasang Home” featuring my favorite Argentina Meats recipes I cook at home!

Argentina Corned Beef Pepper Rice

This recipe is perfect for the barkada, housemates, and for the whole family! Cook a big batch and share it with your loved ones or not… You can eat this all on your own… It’s your life.

Ingredients:

3-4 cans of Argentina Corned Beef
Cooked brown rice (don’t roll your eyes—it’s healthier than white rice)
3 pieces of garlic, minced
2 onions, cut in rings
1 small pack of frozen peas
2 fresh carrots, chopped
Extra virgin olive oil (EVOO)
1-2 tsp freshly ground pepper (preferably not powdered pepper)
Fresh parsley, chopped

Easy peasy:

Step 1: Sauté garlic in EVOO.

Translayshun: Mag gisa ka ng bawang.

Step 2: Empty 2-3 cans of Argentina Corned Beef into the pan.

Step 3: When the corned beef is slightly cooked, add the chopped carrots and frozen peas (it’s OK if frozen, it will thaw out).

Tip: Cover the pan to steam the peas and carrots. Parang sauna lang ang effect. Don’t overcook the veggies or else… You don’t want me angry… I’m watching you.

Step 4: When the veggies are slightly cooked, add the cooked brown rice (day old rice is also good) to the mix.

Step 5: Add freshly ground pepper. I use at least 2 tsp of pepper but add according to taste.

Tip: Todo n’yo na ang paminta! Kasi hindi na s’ya “pepper rice” kung hindi malalasahan ang pepper. Di ba?

Step 6: Stir all the ingredients. Eto na ang halo-halo portion.

The garnish: Caramelized onions

You can cook this ahead of time or while cooking the corned beef rice. It depends if you’re a multitasker. Me? I can cook, tweet, eat, and take photos at the same time. This was exactly how my camera fell into the pan one time. Haaay! Concentrate, Jenni!

On a separate pan, caramelize onions in EVOO.

Cook the onions in low heat until it caramelizes. It takes 15-20 minutes to cook them. If you try cooking them in medium or high heat, as God is my witness, they will burn. Be patient, wag P.G. ang peg.

It’s all about the presentation: 

I know what you’re thinking… A bunt pan??? Isn’t that for baking??? Uhm… Let us use our imagination, shall we?

No, we are not baking this… scroll down and everything will make sense…

BOOM!

Told ja!

I’m proud of this presentation. I deserve more corned beef portion.

Extra! Extra! Aside from the 3 cans of Argentina Corned Beef that I mixed in with the rice, I cooked extra corned beef and placed it in the middle of the ring. The “extras” in life is what really makes life worth living!

Add garnish: Top the corned beef with caramelized onions and chopped fresh parsley.

You don’t need a bunt pan or a jello mold to achieve this kind of presentation.

My helper “Liza 2000″ is smart. Here’s her idea:

Using a plastic container, she made a well in the middle of the rice. You can also transfer the molded rice onto a platter then add the corned beef in the middle. Bravo, Liz!!! Ikaw na!

A slice of heaven… Parang cake lang. My gosh, I’m officially hungry.

This dish is the perfect blend of savory, peppery, and slightly sweet, thanks to the veggies and caramelized onions. There’s no icing in this recipe. It’s not cake, it just looks it. Why am I defensive? Haha!

It’s perfect for breakfast or lunch or dinner or you can eat it the whole day. Like what I said, it’s your life.

Relief Food Recipes

One of the perks of having Argentina and Century Tuna as my blog sponsors is that I get regular delivery of my favorite canned goods.

Thanks to my canned goods stash, I was able to cook relief food during the last monsoon.

Initially, I cooked for the families of my household and the staff of the building I live in. When everyone got their supplies, I had more food to spare so I thought of sharing it to others in need. Thanks to my friends, Patricia Hizon and Tim Yap, for distributing the cooked food!

Friends and relatives tell me that I should open a restaurant or sell food, but my dream is to have a Soup Kitchen and feed the hungry for free. For now, Maison Epperson is a satellite "Soup Kitchen", open 24/7, in times of calamities and disasters.

Our helper of 8 years Liza is my designated “sous chef” at home. We call her the “Liza 2000″ (parang vacuum cleaner lang ang peg, haha!) because she is small but amazing! We love her!

Dylan’s nanny Gina is also the best helper! She manages to take care of our energetic two-year old while helping out in the kitchen too.

No matter how busy and sometimes stressed I am, Tom and Aryanna never fail to make me laugh! Sometimes they also make me want to pullout my hair! Haha!

It is the rainy season so there it is likely that there will be more flooding. Hopefully, it will not be as bad as this but it is best to be prepared. I just want to share some of the relief food recipes I cooked using canned goods that are usually stocked up in pantries/kitchens. Sometimes, due to emergencies, we don’t have time to go to the grocery and buy food, so having canned goods on hand, and with the use of some fresh ingredients, we can whip up relief food for those in need:

Corned Beef Arroz Caldo

No chicken in stock? Use corned beef as meat for your arroz caldo.

Use eco-friendly cups with cover. No utensils needed.

Easy peasy:

•Saute corned beef.
•Add rice and water.
•Bring to a boil.
•Add garlic and ginger.
•Simmer till cooked.

Vienna Sausage Omelette

Everyone loves Vienna sausage, especially kids! Make an omelette out of it.

Cut the Vienna sausages in small pieces then fry them. Cook the omelette and add the sausages. You can cook them in small portions or make a big batch of Vienna sausage frittata and slice them individually.

Tuna Fried Rice

Pantawid-gutom ito!

Use food containers made from recycled paper, corn or yam packaging.

Canned tuna + Steamed rice = Tuna Fried Rice

Pink Cupcakes

Make them from scratch or out of the box. Nothing fancy, just simple cupcakes. They could put a smile on anyone’s face!

Pack them individually in brown paper bags.

Flood or no flood, you can cook these recipes any time!
