Some people use their fine china only on special occasions. Some buy gourmet ingredients only to serve to guests. I do the opposite. I use my best plates everyday and I serve my family simple but special meals using the best ingredients on a daily basis. Of course, I make extra effort too when entertaining guests but my greatest pleasure is serving my family. It’s not about impressing other people, it’s about sharing the finer things in life with loved ones.

I want to share with you a simple yet special recipe that you can cook anytime of the day and feel as if you’re having breakfast in one of the B&B’s in Portofino, Italy. Lascia mangiare!

Basil & Burrata Open Omelette

What is burrata? It’s fresh Italian cheese, made from mozzarella and cream. The outer shell is solid mozzarella while the inside contains both mozzarella and cream, giving it an unusual, soft texture. It is also defined by some sources as an outer shell of mozzarella filled with butter or a mixture of butter and sugar. It is usually served fresh, at room temperature. The name “burrata” means “buttered” in Italian. Wiki

Burrata has a mild, milky taste and creamy texture. This fresh cheese resembles a fresh mozzarella ball, but when split open, you will be delighted to discover a rich-tasting soft filling of fresh pieces of mozzarella soaked in heavy cream. You can serve it cold on its own and just drizzle it with extra virgin olive oil and add fresh ground pepper. It’s a good appetizer. I love it served warm and the cream inside oozing. Mmm…

Ingredients:

1 tbsp olive oil
2 eggs (I only use the egg whites)
2 tbsp non-fat milk
burrata
fresh basil leaves
fresh ground pepper
Himalayan pink salt

Tom and I started an herb garden at our new house. These basil leaves were freshly picked. I lav et! We’re growing cherry tomatoes next!

Easy peasy:

Step 1: Heat oil in a small non-stick frying pan.
Step 2: Add the beaten egg, season with salt and pepper.
Step 3: Sprinkle with the burrata cheese and fresh basil and cook for 3-4 minutes, over a medium flame.

Serve with a smile! 🙂

Ta-dah! No-fail omelette!

You can buy burrata in deli’s and sometimes, Rustan’s grocery has it. Try Instagram shops too. Just Google it.
